I'm changing this one up a bit. Instead of listing authors I've only read one book from, I'm listing authors that I'm only read one series from. I'm narrowing to down to authors with series that are finished, but I would just like some more stories by these authors.

Veronica Rossi
I loved Under the Never Sky series, so I definitely want to see more from her! And I know that she's written a book recently under a pen name, but it's an NA book and I am a big avoider of NA
Stephanie Perkins
Didn't really write a series, but I still really liked her books! There is news of some more books from her and I'm really excited about it! (Here are the two books: Untitled (book #5) & Untitled Standalone)
Carrie Ryan
I read The Forest of Hands and Teeth years ago and loved it! She's apparently writing a MG book with another author and I'm curious about that! (The Map to Everywhere)
Leigh Bardugo
The Grisha Trilogy is one of my all-time favorite fantasy series! Leigh has a spin-off series, The Dregs, in the works, which I am enormously excited about!
Tahereh Mafi
Another series that I LOVE, another book in the works. Like Carrie Ryan, Tahereh is writing a MG book, Furthermore.
Cynthia Hand
The Unearthly series is such a great series! Cynthia does not have another series in the works, but she has a contemporary standalone coming out next year! (The Last Time We Say Goodbye)
Laini Taylor
Laini is such a great writer! Her writing is so beautiful and I would love to read more from her! I haven't heard any news of new books from her, but I'm definetly going to keep a look out!
Jessica Spotswood
I recently finished her Born Wicked series and I need more! No news yet, but I'll keep looking!
Jodi Meadows
I feel like I'm repeating myself, but I loved the Incarnate series! She also has a book, The Orphan Queen, coming out next year!
Carrie Jones
I read the Need series years ago, but I remember loving it. I don't really see anything new coming from her, but there is a vague reference to something, no idea what it is yet.
So, those are my authors that I've read one series from and would love to read more from!

Great list! I also need to read the rest of the Under the Never Sky series, I really like the first book and I should get on finishing that series up. Many of these authors I own books from but just haven't read them yet. If I ever finish my TBR pile it will be a miracle.
